Rebeca Buendía is a smoked chile spirit based on Pasilla de Oaxaca, koji, Belgian Saison yeast, naked and pearled barley. Using pasillas as a botanical, we're able to achieve a beautiful chocolatey aroma and a warming depth of reddish ochre. The liquid is barrel-aged in Oloroso casks, wrapping it in a layer of velvet, before being rectified with spent pasilla kombucha. “Rebeca Buendía” is inspired by the orphan of Colombian author Gabriel García Márquez’s 100 Years of Solitude, who is said to eat earth as a way of connecting to her surroundings. This earthy, smokey spirit is dedicated to her.
