FALLEN PONY BLEND
When spirits are distilled, the final blend is generally higher in alcohol than what they would normally be consumed at. Water is often added to bring it down to the right level, which isn’t a bad thing because it actually works magic in spirits (think a drop of water or ice in a scotch and how it can brighten up the flavors). That being said, we asked ourselves, why use water when we can use something else. Kombucha came to mind, and with that, this spirit was born.
Fermenting kombucha that we later distill and blend into the spirit, helps us to introduce acidity to our Fallen Pony blend, as well as round out the tea and quince notes, adding bitterness and astringency.
