The Onyx blend is our collaboration with Lyaness, Ryan Chetiyawardana's new London cocktail bar.
This collaboration was born from the two teams’ desire to push boundaries, yet with a respect and love for what has come before.
Onyx uses Koji as both a transformative organism and a botanical. Blackening the koji resulted in heavy roasted and sweet earthy notes, while our distillation process brought forward salinity and orchard-fruit richness. We re-distilled our black walnut aged Helena to capture the concentrated aromatics of the wood and added a touch of equinox hops for a tropical lift. To round it all off, we balanced the flavor and texture with a hibiscus and a birchwood kombucha.
Wood spice and white stone fruit on the nose, with a full, lightly sweet palate and sweet spice aromas.
